MIA

Hope everyone been enjoying their summer! I know I have. I just got back from Miami, Fl. I spent a few days down there relaxing and partying! I consumed a lot of alcohol and food of course. I’m a share with you all the yummy food I ate and a recipe of my new favorite drink, caipirinha!

Caipirinha

Ingredients

  • 2oz Cachaca
  • 1 tbsp agave nectar
  • half a lime, cut into 4 wedges

Instructions

  1. Add your limes and agave in glass. Muddle together.
  2. Pour in cachaca, mix well.
  3. Garnish with lime wheel or lime leaf.

Unofficial First Day of Summer

Memorial Day is the “unofficial first day of summer”. The weather was perfect yesterday for some poolside grilling, so that’s what I did. I made some surf and turf skewers and boozy fruit! Great way to the start off the unofficial first day of summer.

 

Spiced Sea Bass Skewers

seabass, skinned & cut into squares
3 tbsp olive oil
1 tbsp cayenne pepper
2 tsp salt
1 garlic clove, minced
1 tbsp orange zest
1 tsp lemon garlic Flavor God
1 tbsp parsley, chopped

1. Soak your skewers for 20 minutes. Prepare your fish and place on skewers.
2. Combine all your ingredients and mix well over fish.
3. Grill for 3 minutes on each side, or until white and flakey.
4. Drizzle over your choice of sauce (GG Sauce duh!) and enjoy!

Boozy Watermelon

1 in. watermelon slices
1 oz. bourbon (or more)
ripped pieces of mint

1. Set your sous vide to 122 degrees F and prepare your watermelon.
2. Place your watermelon slices in a ziplock bag along with bourbon and mint.
3. Use the water displacement method and sous vide for 30 minutes.
4. When done drop in ice water bath, eat right then or store in fridge for a few days.

*If you don’t have a sous vide machine. Simply place in bags and set in fridge over night or up to 2 days.

Mi-Mo-Sher

The hell is a “mi-mo-shers”? Made up word I just made for mimosas style drinks with sherbet. Instead of using orange juice, scoop some orange sherbet in a glass and pour over the bubbly! I got a little creative and found some peach sangria sherbet. Which was fantastic. Not only does it flavor the champagne but it keeps it cold longer too. Perfect poolside cocktail with a fruit and cheese platter. Just a fun twist on mimosas. Try a Mi-Mo-Sher for your Sunday brunch or poolside kickback!

Ingredients

  • 2 scoops sherbet
  • champagne

Instructions

  1. Use 2 scoops sherbet and pour over champagne!
