The Creamy BLT Chicken

One pot meals are magical. Personally I don’t like to make a big mess with dishes or stand in the kitchen too long. It’s days i love being in the kitchen all day but sometimes I need a one and done meal!

My boo came into town and cooked me this meal. I got on his nerves hovering over him and trying to tell him what to do lol! So I ran off with the recipe and tweaked it.

This skillet meal is so good! Bacon is involved and bacon grease! Cooking chicken or veggies in bacon grease is so magical. It steps up the flavors in so many ways! The fresh components of the spinach, onions and tomatoes. The fatty components of the bacon and heavy cream balances it out. Oh! Plus this meal makes for leftovers. Who doesn’t love good leftovers!?

I like to call this pasta meal The Creamy BLT Chicken. Enjoy!

 

 

The Creamy BLT Chicken

Ingredients

  • 5 strips bacon, chopped
  • 3 boneless chicken breast, chopped
  • 2tbsp Italian seasoning
  • 1 small onion, diced
  • 1 tomato, diced
  • 2 cups spinach
  • 2 cups heavy cream
  • 1 cup Italian blend cheese
  • 16 ounce rotini pasta, cooked

Instructions

  1. Start by preparing everything as far as chopping, dicing and cooking the pasta. So this recipe can go along swiftly!
  2. Heat your skillet to medium-high heat and crisp your bacon. About 5 minutes.
  3. Remove a few pieces of bacon and set aside. (Keep your bacon grease in skillet!) Add your chicken, seasoning and turn heat to medium. Cook about 5-7 minutes. Stirring occasionally.
  4. 3 minutes in add your onion.
  5. Stir everything real good. Chicken should be fairly cooked and onions translucent.
  6. Add your tomatoes and spinach. Cook until spinach wilt.
  7. Add your cream and reduce 6-8 minutes or until slightly thick.
  8. Turn heat OFF add your cheese. Stir then add your pasta. Mix well!
  9. Top with bacon and enjoy!

*I like buying pre-diced tomato and onions for this recipe. Makes it hassle free. Less dishes to wash!
**I cut my bacon and chicken with kitchen shears. So simple and affective.
***I reserve some of the pasta water just in case my pasta sauce gets too thick.
****This meal is freezer friendly. Don’t add your cheese yet, if you want to freeze this meal.

Chicken Ragu

Ingredients

  • 1 cup mushrooms
  • 1/2 onion, chopped
  • 2 chicken thighs, chopped
  • 3 cloves garlic, minced
  • 1/3 cup white wine
  • 1 cup tomato sauce
  • 1 cup spinach
  • 2 tbsp salt + pepper
  • 3 tbsp unsalted butter

Instructions

  1. Start by melting 2 tbsp butter. Adding your mushrooms, onions and salt + pepper. Cook for 3-5 minutes.
  2. Toss in your chicken add some more butter. Cook 5-7 minutes.
  3. Add your garlic, stir. Pour in your wine and scrap up the brown bits from the bottom of your pan.
  4. Add your tomato sauce, stir and simmer for 10 minutes. I added some water to loosen up the sauce.
  5. Last 5 minutes add in your spinach. Mix in well and until wilted.
  6. Serve this over pasta or rice. Top with cheese and enjoy!

Kind of a One Pot Pasta

We all know I love easy flavorful cooking. I was out grocery shopping for a whole other reason and I got hungry. I didnt know what to eat so I created a dish in my head, got the ingredients and viola! A kind of a one pot pasta was created. Tortellini and Sausage bake to be exact. You can easily play around with this recipe by being creative with the veggies and substituting sausage with chicken or no meat at all making it vegan. Either way this recipe is easy and yummy. Served along side with fresh greens tossed with creamy ranch, dinner rolls and of course a glass of wine (for my 21 and up)!

 

   

 

Tortellini Sausage Bake

Ingredients

  • 1lb tortellini pasta, cooked
  • 1 tbsp olive oil
  • 13oz sausage link, sliced
  • 1 white onion, chopped
  • 8oz baby bella mushrooms, sliced
  • 1 tbsp garlic paste
  • 24oz pasta sauce
  • 1/3 cup heavy cream
  • 2 cups mozzarella cheese, shredded

Instructions

  1. Preheat your oven to 350 degrees.
  2. Add your sausage to a skillet with olive oil and cook for 5 minutes on medium heat. Let them char up a bit.
  3. Add your onion and mushroom, stir well and cook for 5-7 minutes. (If needed add a little more olive oil)
  4. Add your garlic paste, stir in well and cook for 1 minute. Turn off heat!
  5. Combine your cooked tortellini, pasta sauce and heavy cream. Mix well.
  6. Now, combine your sausage mixture with your pasta. Mix well and pour into a baking dish.
  7. Top with mozzarella and bake for 20 minutes.
  8. Turn your broiler on for 5 minutes to crisp up the top.
  9. Let your pasta bake cool for 5 minutes and top with fresh herbs. Enjoy!
