Kind of a One Pot Pasta

We all know I love easy flavorful cooking. I was out grocery shopping for a whole other reason and I got hungry. I didnt know what to eat so I created a dish in my head, got the ingredients and viola! A kind of a one pot pasta was created. Tortellini and Sausage bake to be exact. You can easily play around with this recipe by being creative with the veggies and substituting sausage with chicken or no meat at all making it vegan. Either way this recipe is easy and yummy. Served along side with fresh greens tossed with creamy ranch, dinner rolls and of course a glass of wine (for my 21 and up)!

 

   

 

Tortellini Sausage Bake

Ingredients

  • 1lb tortellini pasta, cooked
  • 1 tbsp olive oil
  • 13oz sausage link, sliced
  • 1 white onion, chopped
  • 8oz baby bella mushrooms, sliced
  • 1 tbsp garlic paste
  • 24oz pasta sauce
  • 1/3 cup heavy cream
  • 2 cups mozzarella cheese, shredded

Instructions

  1. Preheat your oven to 350 degrees.
  2. Add your sausage to a skillet with olive oil and cook for 5 minutes on medium heat. Let them char up a bit.
  3. Add your onion and mushroom, stir well and cook for 5-7 minutes. (If needed add a little more olive oil)
  4. Add your garlic paste, stir in well and cook for 1 minute. Turn off heat!
  5. Combine your cooked tortellini, pasta sauce and heavy cream. Mix well.
  6. Now, combine your sausage mixture with your pasta. Mix well and pour into a baking dish.
  7. Top with mozzarella and bake for 20 minutes.
  8. Turn your broiler on for 5 minutes to crisp up the top.
  9. Let your pasta bake cool for 5 minutes and top with fresh herbs. Enjoy!

Pumpkin Everything Season

Yup! It’s that time of year again where everything you can imagine is pumpkin flavored. I had to of course partake and make a pumpkin creation. Using one of my favorite dishes, pasta. I created a Pumpkin Penne with Fried Sage. Thick and creamy pumpkin sauce tossed with tender penne pasta topped with fried sage.

Pumpkin Penne with Fried Sage

Ingredients

  • 1 box penne pasta
  • 5 tbsp olive oil
  • few sage leaves
  • 1 garlic clove, minced
  • 1/4 tsp red chili flakes
  • 1/4 tsp cinnamon
  • 1/2 cup heavy cream or 1/4 cup half n half
  • 1/4 cup parmesan cheese
  • salt and pepper to taste

Instructions

  1. Go ahead and get your boiling water ready for your pasta. Cook accordingly.
  2. In your sauce pan heat up your olive oil. Once heated add sage.
  3. Remove sage once slightly browned. CAREFULLY add in your pumpkin, stir around.
  4. Add your garlic (let it fry a little in the oil), red chili and cinnamon. Stir well.
  5. Add your cream and stir well. Salt and pepper to taste. Now mix in your cheese, by this time drain pasta (keeping 1/4 cup pasta water) add in your pasta and toss.
  6. Add in your pasta water to thin out the sauce if needed.
  7. Serve pasta hot, top with more cheese if you please and fried sage. Enjoy!

One Skillet Lasagna

 

Need a easy weeknight meal? Try this one skillet lasagna! Easy yummy meal in 30 minutes!

 

One Skillet Lasagna

Ingredients

  • 2 strips of bacon
  • 1/2 lb ground beef (can substitute with turkey or chicken)
  • 1/2 onion, chopped
  • 3 garlic cloves, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 tsp red chili flakes
  • 1 1/2 cup pasta sauce
  • 1 1/2 cup crushed tomatoes
  • 1/2 cup water
  • 6 lasagna noodles, broke into pieces
  • basil
  • 5 tbsp ricotta cheese
  • mozzarella

Instructions

  1. Cook your bacon crispy. Add ground beef and break down as it cooks 5-7 minutes on medium high heat. Add in your onion, garlic, salt, pepper, oregano and chili flakes. Cook 3 minutes.
  2. Add your pasta sauce, tomatoes and water. Stir and bring to a simmer. Add noodles, stir and cover for 15 minutes on medium high heat.
  3. Stir in your ricotta cheese. Then top with fresh mozzarella slices and basil! Let mozzarella melt then serve!
