Vegetarian Chili

The best way to melt all this snow is by making a warm bowl of hearty healthy chili!

 

 

Vegetarian Chili

Ingredients

  • 7 Garlic Gloves, minced
  • 1 large Onion, chopped
  • 1 Jalapeno, chopped
  • 1 Bell Pepper, chopped
  • 1 Zucchini, chopped
  • 1 Yellow Squash, chopped
  • 2-15oz can of Kidney Beans, drained and rinsed
  • 2-15oz can of Chick Peas, drained and rinsed
  • 1-28oz can of Crushed Tomatos
  • 6oz Tomato Paste
  • 1/2 pack of Soy Chorizo (or a veggie sausage crumble this step optional)
  • 2 tbsp Chili Powder
  • 1 tbsp Oregano
  • 1 tbsp Cumin
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil

Instructions

  1. The best way to execute this recipe is by prepping everything. So have everything chopped up and measured out.
  2. In a large pot add your olive oil over medium heat. Add your onion, jalapeño and garlic. Cook 3-5 minutes.
  3. Add your bell pepper, cook 2 minutes.
  4. Sprinkle in all your seasonings and S+P, stir in well.
  5. Add your zucchini and squash. Stir and cook 1-2 minutes.
  6. Stir in your tomato paste, cook 2-3 minutes.
  7. Add in your beans and crushed tomatoes. Stir well. Take your crushed tomato can and fill it up with water and pour in the mixture. Mix well.
  8. Add in soy chorizo and mix well.
  9. Turn up your heat to bring it to a simmer. Cover and turn heat to low, simmer for 1 hour.
  10. Serve with cheese and a dollop of sour cream. Or with some Frito Lays. Enjoy!

Vegan Kale Delight

So these past two months I’ve been on this vegetarian/pescatarian diet. What is a pescatarian you might ask? They have a vegetarian diet excluding all meat but fish. Yes, I’m giving up chicken. As hard as that sounds, I’ve been doing pretty good. I had a few relapse but I’ve been meat free for 2 weeks now! I can already see changes in how I feel also how my bowels move. TMI I know, but it’s important to share. I will still be posting recipes that involve meat, so no worries. But right now I’m going to share with you TASTY vegetarian meals that even a meat lover like myself would love!

 

 

Vegan Kale Delight

Ingredients

  • 1 bag of Kale, chopped
  • 1 red pepper, chopped
  • 1 Onion, chopped
  • 6 Garlic Cloves, minced
  • 1tsp Salt
  • 1tsp Pepper
  • 1tsp Garlic Powder
  • 1can Coconut Milk
  • 1tbsp Coconut Oil (or whatever oil you have on hand!)

Instructions

  1. Start off by sautéing your pepper, onion, garlic with coconut oil. For 3-5 minutes. Add your salt, pepper, garlic powder and stir well. Cook 1-2 minutes. Add in your coconut milk, bring to a slight boil/simmer. Once your mixture is at a simmer add in your kale. Stir well, cover and turn heat to medium-low to low. Cook about 6-8 minutes. Until most but not all of the milk is gone. Serve over quinoa or rice. Also good as a side dish. Enjoy!

Chicken Noodle Soup with a Soda on the side!

It’s officially soup season y’all! It’s cold out so keep warm with this hearty Chicken Noodle soup. Any time I hear chicken noodle soup I automatically think of that lil mama song! *Chicken noodle soup! chicken noodle soup! chicken noodle soup with a soda on the side!* Enjoy!

Chicken Noodle Soup

Ingredients

  • 4 Chicken Thighs (Bone In or Boneless, Skin Removed)
  • 3 Celery Stalks, diced
  • 3 Whole Carrots, peeled & diced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1/2 tbsp Oregano
  • 32oz Low Sodium Chicken Broth
  • 8oz Egg Noodles, cooked (keep a cup or 2 of pasta water)
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Heat your soup pot or dutch oven with olive oil to medium heat. Toss in your celery, carrots and onions. Season with a pinch of salt and pepper. Cook and stir 5 minutes.
  2. Add your garlic cook 1 minute. Stir everything together then push to the side making a well in the middle. Season your chicken lightly with salt and pepper and place in the middle (add a little more oil if needed) Cook each side 3 minutes, until browned.
  3. Sprinkle in your oregano, stir. Add your chicken broth. Stir and bring to a boil. Turn down to medium low heat and simmer for 30 minutes.
  4. Take out your chicken, remove bone and shred. Add chicken back and add your noodles and pasta water if you need more liquid.
  5. Stir everything up, add more salt or pepper if needed. Top with fresh parsley and enjoy!
