Taco Tuesday Made Easy

It’s Tuesday so that calls for tacos or in this case fajitas. I mean I’m rolling em up in a tortilla, same difference right? Anyways. I’m all about quick flavorful meals. This sheet pan meal is sure to satisfy you any night of the week. Few ingredients plus it’s not costly. I spent roughly around $12 for this meal that feeds 1-4 people. Also this is a freezer friendly meal. Cook it, freeze it, heat it up later! Try this easy sheet pan meal for your Taco Tuesday festivities!

 

Sheet Pan Tacos

Ingredients

  • 1 red chili pepper, sliced
  • 2 jalapeños, sliced
  • 1 orange bell pepper, sliced
  • 1 medium onion, sliced
  • 3 chicken thigh filets, cut into strips
  • 2 tbsp olive oil
  • 3 tbsp taco seasoning
  • 10 tortillas

Instructions

  1. Preheat your oven to 425 degrees.
  2. Line your baking sheet with parchment (if you want easy clean up). Arrange your sliced peppers and onions. Top with chicken thigh strips.
  3. Drizzle olive oil all over and season with taco seasoning!
  4. Pop in oven for 30 minutes. Stirring mixture around 15 minutes in.
  5. Heat up your tortillas in some foil last 10 minutes of cooking time.
  6. Enjoy!

Easy Friday Fajitas

It’s Friday! Time to relax and enjoy the weekend. Here is a easy recipe for these Friday fajitas! I saw this on damndelicious.net and put a slight twist on em. Throw everything in a foil packet, which makes it easy prep and clean up. I want to do some with some chicken and mushrooms or steak and peppers! Sky’s the limit with these foil packets.

 

 

Easy Friday Fajitas

Ingredients

  • 1lb shrimp, peeled and devined
  • 1 green bell pepper, sliced
  • 1 red bell better, sliced
  • 1/2 onion, sliced
  • 2 sweet corns, kernels cut off
  • 4 tbsp olive oil
  • 2 tbsp taco seasoning or seasoning of choice

Instructions

  1. Prepare your shrimp and veggies. Preheat oven to 400 degrees and tear off nice size pieces of aluminum foil, about 6.
  2. Toss everything in a bowl, mix well.
  3. Place even portions on aluminum foil and fold up to make packets. Place in oven for 15-20 minutes.
  4. When done shrimp will be pink and veggies will be tender. Dollop on some sour cream and serve with tortillas and rice!

Pork Wonton Tacos

Pork Wonton Tacos

Ingredients

  • Pork Wonton Tacos
  • 1lb pork roast
  • 4 tsp liquid smoke
  • 2 tsp sea salt
  • 2 cups broccoli slaw
  • 1/2 shallot thinly sliced
  • wonton wrappers
  • Jazzed Up Soy Sauce
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 1/3 pineapple juice
  • 2 tsp garlic, minced
  • 1 tbsp brown sugar
  • 1/8 tsp ginger

Instructions

  1. Put pork roast in slow cooker along with liquid smoke and seas salt. Slow cook for 8hrs. Remove from slow cooker and pull apart with fork.
  2. Preheat oven to 400 degrees. Spray cooking spray on baking sheet and lay out wonton wrappers. Put a spoonful of pork, top with broccoli slaw and shallot. Pinch corners together with water and assemble side by side. Spray tacos with cooking spray and bake 10-15 minutes.
  3. Meanwhile make sauce by combining all the ingredients and cooking it to a boil. Reduce to a simmer and let sauce thicken. When done drizzle over tacos and enjoy!
