This was an inspired recipe from Mrs. Zoe Kelly! I used what I had on hand and threw in a few extra ingredients because why not? This recipe is really easy and super adaptable. Serve along side with some crusty bread and you got a hearty lunch!
Chicken Sausage + Kale Soup
Ingredients
- 2-3 chicken sausage links chopped
- 1 bell pepper chopped
- 1/2 small onion chopped
- 4 garlic cloves chopped
- 6 cups chicken stock
- 1 tbsp butter
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp italian seasoning
- 1 tbsp garlic + onion seasoning
- 8 baby yellow potatoes quartered
- 2 handfuls of kale chopped
Instructions
- In a large enough pot. Add your butter to medium heat.
- Toss in your sausage and cook 5-7 minutes or until browned.
- Toss in your bell pepper, onion + garlic, sprinkle in your salt and pepper. Mix and cook 3 minutes.
- Pour in your chicken stock. Sprinkle in your italian seasoning and garlic + onion seasoning. Bring to a simmer. (I let mine simmer for 10 minutes.)
- Carefully taste your broth to see if your need any more seasonings. Toss in your potatoes along with your kale. Stir and cook 10-15 minutes.
- Pour into a bowl with desired amount of broth and enjoy with some crusty bread!

This was an inspired recipe. I really didn’t measure anything. Just gave you all a guesstimate. You really cant mess this up. Use low sodium chicken stock. I also added a little bit of cajun seasoning for a spicy kick! Also use whatever sausage you feel like using even vegan sausage along with a vegetable stock to make it vegan. I personally love Trader Joes chicken sausage selection. Throwing all these ingredients in your crockpot makes this recipes much easier. Just throw in your potatoes the last 30 minutes to a hour!
