I was craving my fav Mexican dish, flautas. I just threw together my classic shredded chicken recipe with some adobo seasoning, peppers and onion. I then took it to next level and made some guacamole to top em with. I was really impressed at how good these came out and how simple it was.
Chicken Flautas
Ingredients
- 2 chicken breast cut in halves (4 chicken cutlets
- 1 bell pepper
- 1/2 small onion
- 1-2 tbsp adobo seasoning
- 1 cup water
- 1/2 can of black beans
- 6 to rtillas
- 1 tbsp olive oil
- 2 cups vegetable oil
Instructions
- Add olive oil to your pot on medium high heat. Toss in your pepper and onion, stir and cook for 3 minutes.
- Drop in your chicken along with your adobo. Stir and cook for 3-5 minutes.
- Pour in your water, turn heat to medium low and cover. Cook for 20-30 minutes or until your meat is tender and shreddable. Last 5-10 minutes cook uncovered.
- Shred your chicken up then toss in your beans. Mix well.
- Heat your vegetable oil. Mean time place shredded chicken in tortilla. Roll it up and place a tooth pick to keep it closed.
- Place 2-3 in oil and fry 3-5 minutes each side. When done place oil plate with paper towel.
- Assemble your flautas however you want and enjoy!

You can add whatever you want to your flautas. Beef, pork, shrimp, veggies etc.
You can omit black beans and add whatever you desire.
I tossed in some shredded cheese.
I topped my flautas with sour cream, taco sauce, tomatoes and guacamole.

Fresh Guacamole
Ingredients
- avocado
- red onion
- tomato
- cilantro
- salt
- lime juice
Instructions
- I used 1 avocado and just chopped up as much onion, tomato and cilantro that I wanted. I squeezed in a half of a lime. Salt to taste. Mashed it and up and popped it in the fridge. Add jalapenos for some heat.
