Y’all know by now that I LOVE me so asian cuisine! I honestly cant wait to take a trip to any part of Asian, well specifically Tokyo. But I would love to spend a month there traveling to different parts by train. Soon come! Anyways, DanDan Noodles is a delicious versatile dish and its a common street food. You know I love to use what I have on hand and what I like. Give this recipe a try for your next dinner!
DanDan Noodles
Ingredients
- 1/2 lb ground meat chicken, turkey or pork
- few bok choy leaves
- 3 green onions chopped
- 4 garlic cloves chopped
- 2 tsp sesame seeds
- 1/2 chili pepper chopped (optional)
- 3 tsp ginger
- 3 tbsp soy sauce
- 2 tbsp black vinegar
- 2-3 tbsp white sugar
- 1-2 tbsp peanut butter or tahini optional, taste great with or with out
- 2 tbsp sesame oil
- 1 pack of udon noodles
Instructions
- Start by making sure everything is prepped because this is a dump and go recipe. In other words quick!
- Mix your ginger, soy sauce, black vinegar, peanut butter and sugar together. Set aside.
- Add sesame oil to skillet on medium heat. Toss in your green onion, chili pepper, garlic and sesame seeds. Mix constantly. Don't let the garlic burn!
- Once you start smelling the aromas from the garlic and onion. Push everything to the side of the skillet and add your ground meat. Break the meat up but let it sizzle in the skillet for a little.
- Pour in your sauce and mix everything together and continue to break up your meat.
- Add in your udon noodles. Add a little bit of water if needed. Mix everything together.
- Turn off your heat and toss in your bok choy. Mix well. Garnish with sesame seeds, chopped peanuts (if you added peanut butter) green onions and chili oil! Enjoy!

You can use spinach, kale, broccoli, edamame or whatever green you desire!
When using udon noodles. Prepare them as the packaging says. If you cant find any you can use spaghetti pasta.
