It’s Friday! Time to relax and enjoy the weekend. Here is a easy recipe for these Friday fajitas! I saw this on damndelicious.net and put a slight twist on em. Throw everything in a foil packet, which makes it easy prep and clean up. I want to do some with some chicken and mushrooms or steak and peppers! Sky’s the limit with these foil packets.
Easy Friday Fajitas
Ingredients
- 1lb shrimp, peeled and devined
- 1 green bell pepper, sliced
- 1 red bell better, sliced
- 1/2 onion, sliced
- 2 sweet corns, kernels cut off
- 4 tbsp olive oil
- 2 tbsp taco seasoning or seasoning of choice
Instructions
- Prepare your shrimp and veggies. Preheat oven to 400 degrees and tear off nice size pieces of aluminum foil, about 6.
- Toss everything in a bowl, mix well.
- Place even portions on aluminum foil and fold up to make packets. Place in oven for 15-20 minutes.
- When done shrimp will be pink and veggies will be tender. Dollop on some sour cream and serve with tortillas and rice!
