This is by far my favorite new weeknight meal! Grown Up Ravioli! You remember that stuff we use to eat out of a can as kids? Whew. Our stomachs were so tough back then. Well guess what? We don’t have to eat that no more. I adapted this recipe from Chef Resha and now Im sharing with you a easy, quick and delicious Ravioli dish that you can easily adapt yourself! Grown Up Ravioli
Ingredients
- 1 pack of ravioli
- 1 tbsp olive oil
- 1/2 small onion chopped
- 3 garlic cloves chopped (or use squeezable garlic)
- 1/3 cup white wine optional or use chicken stock
- 1/2 cup heavy cream
- 1/2 cup marinara
- handful of sun-dried tomatoes
- handful of spinach
- 6 basil leaves chopped
- 1 tbsp oregano blend or italian seasoning
- 2 tsp garlic powder
- 1-2 tsp salt
- 2 tsp black pepper
- 3 tsp red chili flakes optional
- 1/4 cup parmesan cheese blend
- few slices of mozzarella
Instructions
- Start by heating a nice size oven safe skillet to medium heat. Add you olive oil, onion and a pinch of salt. Cook 2-3 minutes.
- Add in your garlic and cook 1 minute stirring. Pour in wine. Reduce by half.
- Pour in your heavy cream, marinara and all your seasonings. Toss in your sun-dried tomatoes and basil as well. Give it a good mix and taste for seasoning.
- Now add in your ravioli and bring the sauce and ravioli to a slight simmer. Cook for 8-10 minutes.
- Your sauce should be thick and your ravioli should be tender. Toss in your parmesan cheese and spinach, mix.
- Now you can stop here and enjoy OR you can top with mozzarella and pop under the broiler for 5 minutes or until cheese is brown and bubbly. Top with more fresh basil, crushed red pepper and that shaky cheese in the green container lol! Enjoy!
Notes
This recipe is super adaptable. Use whatever ravioli and cheese you like. Season however you like. You can omit whatever you don’t like. Its your ravioli, do what you like!
