During my time logged off. I started working out with a trainer in December (@Iamlegend1804). Which I’ve realized, I don’t like working out. I know he sick of me! 😂 I been trying to eat better, so my upcoming cookbook is dedicated to meal prepping and healthy recipes. I been enjoying my home seeing outside just isn’t the same. I started playing Fortnite again with my guys! I been working on new recipes, this cookbook and my next steps in life. Lots of self care and no pressure. I think everyone should put their phone down more often and enjoy your surroundings.

Anyways! Enjoy this recipe inspired by @moribyan. I had so much fun making this easy but flavorful “Creamy Chipotle Chicken Pasta” loaded with honey lime chicken and a variety of veggies. 💚
Creamy Chipotle Chicken Pasta
Ingredients
- 7 chicken tenderloins
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1 tbsp coconut oil or olive oil
- 3 tbsp honey
- 1/2 lime juice
- 1 red bell pepper chopped
- 1/2 small onion chopped
- 4 garlic cloves chopped
- 8 oz penne pasta
- handful of asparagus chopped
- 1/2 cup of peas
- 1/4 cup chipotle adobo sauce
- 2 cups heavy cream
- 1 cup parmesan
- fresh cilantro chopped (garnish)
- paprika garnish
Instructions
- Start by adding your oil to your chicken along with all your seasoning. Mix well. Set your large skillet to medium heat and add your chicken. Cook 3-5 minutes on each side or until cooked all the way through.
- Chop chicken into bite size pieces and toss wit honey and lime juice. Set aside.
- Boil your water for your pasta. Before putting pasta in. Toss in your asparagus and cook for 2 minutes. Remove asparagus then add pasta. Cook according to box.
- In the same skillet. Add a touch of oil and add in your bell pepper and onion. Cook 3-5 minutes.
- Toss in your garlic, cook 1-2 minutes. Pour in your chipotle adobo sauce, cook 1-2 minutes.
- Pour in your heavy cream. Sprinkle in a touch of garlic powder and salt. Mix well.
- Toss in your asparagus and peas. Cook 3 minutes.
- Turn heat low and add in your parmesan cheese, mix well. Then toss in your pasta. Mix. Then top with your cooked chicken along with the juices. Top with more parmesan and sprinkle over some cilantro and paprika and enjoy!
Notes
Add more adobo sauce to make it a bit spicier, even add one of the peppers if you feel like it.
