‘meatball sub

So I was feeling a little Italian when I decided to make these and so glad I was because they were soooo good! Plus I made them by scratch minus the bread. (I’m still working on my dough skills!) Check out the recipe, try it out and let me know how they taste or what you might have done different! 🙂

Meatballs

Ingredients

  • MEATBALLS
  • 1lb ground beef
  • 1lb veal
  • 1tbsp chopped Italian parsley
  • salt/pepper/white pepper to taste
  • SLURRY
  • about a cup of bread crumbs
  • 1 maybe 2 eggs
  • 2/3 cup of water
  • 1tsp olive oil
  • MARINARA SAUCE
  • 1 14oz can stewed tomatoes
  • 1 6oz can tomato paste
  • 1 minced garlic
  • 1tsp oregano
  • 1tbsp chopped Italian parsley
  • about 1/3 cup chopped sauté vidalia onions
  • salt/pepper to taste

Instructions

  1. Mix your ground beef and veal.
  2. Make your slurry by adding all slurry ingredients. Then add slurry to ground beef and veal mixture along with salt, pepper, white pepper and parsley and mix with your hands!
  3. Combine it pretty good but not over combine and form into loose balls.
  4. I used the broiler and pop them in. I pretty much watched them so they didn't burn. Its just a quicker way to cook them but you can bake them at 400 degrees about 20 minutes or utill golden and cooked through.
  5. Start making your sauce by sautéing onions until they're translucent in a nice size pan.
  6. Meanwhile in a food processor add all the marinara sauce ingredients together and blend it up!
  7. Then pour your sauce in the pan with your sautéed onions and then add your cooked meatballs!
  8. You can serve them up now but I let them simmer low all together for about 30 minutes, its like a flavor jacuzzi for the meatballs.
  9. I served them on some fresh bread but you don't have to. Use them for spaghetti or eat em by themselves!
  10. OH YEA! Make sure you top them with some grated or sliced cheeses such as parmesan or provolone!
