Today I had the craving for a meatloaf but didn’t want a whole loaf. So I rolled my meatloaf recipe into balls, glazed them with my mustard bbq sauce and baked them in the oven for 20 minutes. Served with garlic mashed potatoes and seasoned broccoli. Didn’t see a difference!
GG's Meatloaf
Ingredients
- 2 lbs ground turkey*
- 1/2 cup panko bread crumbs
- 1/4 cup milk maybe a splash more
- 1/3 cup BBQ sauce
- 1 tbsp worcester sauce
- 2 eggs beaten
- 1 tbsp parsley chopped
- 1 tbsp creole seasoning
- 2 tsp garlic powder
- 2 tsp black pepper
- 1 tbsp butter
- 1 red pepper diced
- 1/2 onion diced
- 4 garlic cloves chopped
- the glaze:
- 1/2 cup BBQ sauce
- 1/3 cup ketchup
- 1-2 tbsp ground dijon mustard
- 1/3 cup brown sugar
- 1 tsp garlic powder
Instructions
- Preheat oven to 350 degrees.
- Start by sautéing your onions, garlic and red pepper with butter on medium low heat. Cook 3-5 minutes. Set aside to cool.
- In a bowl add in your eggs, milk, bbq sauce, worcester sauce and bread crumbs. Mix well.
- Add in your seasonings. Mix well.
- Add in your ground turkey along with your cooked onion, pepper and garlic plus parsley. Mix until everything is combined. **
- Place your meat mixture in a loaf pan or simply fork your meat in a loaf like shape in a baking dish. ***
- For the glaze combine all ingredients. Taste to see if you need to add anything to it. Now spread the mixture on top of your loaf. Leave a little bit of mixture.
- Bake for 1 hour. Check 30 minutes to see if you want to glaze your top some more.
- When finished let it rest for a few minutes. Cut into slices and serve. Use extra glaze to drizzle over more flavor!
Notes
*Use ground beef or chicken.
** You can take a small portion of your meat mixture and make a little patty. Cook it in your pan you cooked your onions in. This way you can taste to see if you need to add any more seasoning. Because we can’t sample raw meat, ok?!
***If you decide to make meatballs. Roll them into even size balls, sear them in the same pan you sautéed your onions and red pepper. Pour in a tablespoon or two of water or broth in your pan. Top with your glaze and bake in oven on 375 for 20 minutes or until done. Broil for 3-5 minutes to caramelize the glaze on top and enjoy!
