Ya girl done made Oxtails and they were damn good! I eat oxtails at my local restaurants every here and there. So I thought about flavor and what I like in my oxtails. Used what I had on and just threw it together my way. And they came out perfectly tender with a gravy to die for! This recipe is really easy and adaptable. Give it a try for your next Sunday dinner!
Oxtails
Ingredients
- 1-2 lb oxtails I had 5 nice sized pieces
- 1 tbsp avocado oil
- 2 tbsp oxtail seasoning
- 2 tbsp jerk paste I used Walkerwoods
- 3 tbsp brown sugar or 1 tbsp browning*
- 2 tbsp garlic + onion seasoning blend
- 1 tbsp garlic paste
- pinch of salt and pepper
- few sprigs of fresh thyme
- 2 tbsp avocado oil
- 1 sweet onion sliced
- 1 tbsp tomato paste
- 1 tbsp garlic paste
- 1 carton of beef stock
- 1 medium sweet potato chunked
- 1 can butter beans rinsed
- 1 tbsp cornstarch mixed with 1 tbsp water
Instructions
- Clean your oxtails and then add 1 tbsp avocado oil and add all of your seasonings; oxtail seasoning, jerk paste, brown sugar, garlic + onion seasoning, garlic paste and thyme. You can let these marinate for a few hours or over night.
- Too a large pot add your 2 tbsp avocado oil and turn stove to medium high.
- Once your oil is hot, sear your oxtails in batches. Then place to the side.
- In the same pot (you might need to spoon out or wipe out SOME of the oil and really burnt pieces, not all of it because thats FLAVOR) add your onion. Sauce for 3 minutes.
- Add in your tomato and garlic paste, cook stirring for 3 minutes.
- Pour in your beef stock, mix well and scrap the bottom of the pot to get those bits mixed in. Carefully add you oxtail back in plus any left over juices. (I even poured in a little bit of water where I marinated the oxtails in to get those flavors too) Cover and cook for 3-4 hours. (I also sprinkled in a little bit more oxtail and garlic onion blend.)
- Now toss in your chunked sweet potatoes and cook for another 15-30 minutes, until fork tender. The last few minutes add in your butter beans.
- Add in your cornstarch and water mixture and cook 2-3 minutes. This should thicken up your gravy.
- Add some fresh thyme and enjoy!
Notes
Add more or less seasoning! Y'all know the deal! Use what you have on hand. I went with more Caribbean flavors.
*I learned that some people use brown sugar in replacement of browning. Browning isn't much flavor more so on color. I like using brown sugar just be careful to not burn or it will make the pot bitter!
I love sweet potatoes and butter beans in my oxtails. But regular ole potatoes or even mushrooms and peppers would be great with this.
