Peach Melba

Who else was complaining about how cold winter was and now find themselves complaining about how hot it is? I’m guilty. This heat been extreme and it’s not even summer yet. So how do we beat this 90 degree spring heat? One of my yummy recipes, Peach Melba to be exact! What’s a Peach Melba? A French dessert that includes vanilla ice cream accompanied by candied peaches and a raspberry sauce. Peaches are definitely in season right now so this is a perfect excuse to go to the market and get a few juicy peaches. I made this with my homemade vanilla ice cream. A simple, vibrant, cold dessert to make.

Peach Melba

Ingredients

  • 2 peaches, halved and pitted
  • 1 cup water
  • 1 cup sugar
  • 1 vanilla bean, split
  • 6oz fresh raspberries
  • 1-2tbsp powder sugar
  • 1tsp lemon juice

Instructions

  1. Bring water and sugar to a boil, add in vanilla bean. Stir to dissolve sugar.
  2. Add your peaches and cook 4 minutes on each side. Watching pot carefully.
  3. Remove off heat and place peachesin a bowl to cool, once cool it will be easy to peel the skin off.
  4. Once peeled pour over remaining syrup and vanilla bean. Store in fridge for up to 2 days.
  5. For the raspberry sauce: Combine raspberries, sugar and lemon juice to blender. Blend well, pour through a strainer. Pour smooth sauce over vanilla ice cream and add your peaches. Enjoy!
