Peachy Lavender

Peaches are in full affect and I can’t stop eating them! You see them in your grocery stores and markets, so what to do with them? The ideas are endless but let’s do a classic Peach Cobbler with a dash of lavender. The aroma and flavors are incredible. Scoop of some vanilla ice cream and it’s a party!

Peach Cobbler with Lavender

Ingredients

  • 7 peaches, peeled pitted and sliced
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/8 tsp nutmeg
  • 1/4 tsp ground cinnamon
  • 1 tsp cornstarch
  • 2 tsp dried lavender
  • 1 tbsp lemon juice
  • TOPPING
  • 1 cup flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 5 tbsp unsalted butter, cold and cut into small pieces
  • 1/4 cup boiler water

Instructions

  1. Preheat oven to 425 degrees.
  2. Combine the first 8 ingredients in a large bowl. Toss everything together until evenly coated. Pour into a baking dish and bake for 10 minutes.
  3. While that's baking make the topping by combining first 5 ingredients. Then blend in butter with your fingers until mixture looks crumbly. Stir in water.
  4. Remove your peaches from out the oven and spoon on topping, sprinkle with sugar and lavender, bake for another 30 minutes.
