Peaches are in full affect and I can’t stop eating them! You see them in your grocery stores and markets, so what to do with them? The ideas are endless but let’s do a classic Peach Cobbler with a dash of lavender. The aroma and flavors are incredible. Scoop of some vanilla ice cream and it’s a party!
Peach Cobbler with Lavender
Ingredients
- 7 peaches, peeled pitted and sliced
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/8 tsp nutmeg
- 1/4 tsp ground cinnamon
- 1 tsp cornstarch
- 2 tsp dried lavender
- 1 tbsp lemon juice
- TOPPING
- 1 cup flour
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 5 tbsp unsalted butter, cold and cut into small pieces
- 1/4 cup boiler water
Instructions
- Preheat oven to 425 degrees.
- Combine the first 8 ingredients in a large bowl. Toss everything together until evenly coated. Pour into a baking dish and bake for 10 minutes.
- While that's baking make the topping by combining first 5 ingredients. Then blend in butter with your fingers until mixture looks crumbly. Stir in water.
- Remove your peaches from out the oven and spoon on topping, sprinkle with sugar and lavender, bake for another 30 minutes.
