I wanted to try out a new appetizer/side dish, this could even be a snack. I had some mini sweet peppers and a bunch other random stuff. So I came up with these ricotta medley stuffed peppers. So simple and delicious! Try these for your next shindig!
Stuffed Sweet Peppers
Ingredients
- 10 mini sweet peppers, halved and gutted out
- 1 cup mushrooms, finely chopped
- 1 tbsp butter
- 1 tsp salt
- 1 cup spinach
- 2 tbsp garlic, minced
- 1/2 cup ricotta cheese
- 1/4 cup parmesan cheese
- bread crumbs
Instructions
- Preheat oven to 400 degrees.
- Sauté your mushrooms with butter and salt, about 6 minutes. Add in your spinach, cook until wilted down.
- Add your garlic and turn off your heat.
- Mix in your ricotta and parmesan cheese. Fill peppers up with mixture.
- Sprinkle over bread crumbs and pop in the oven for 30 minutes!
