PG? Pickle Gang! Better act like you know! Inside joke between me and a friend. We love pickles. Sweet, tangy, crunchy pickles! I came across a simple pickling recipe and I decided to try it. I cut up some kirby cucumbers tossed them in a jar with a few herbs, a pepper, some garlic and poured over a hot aromatic spice mixture right over everything. I had some of the mixture leftover plus some green beans, so I pickled those too! Pop them in the fridge and let them do their thing! Then I decided to pickle some strawberries. The pickles and strawberries were my favorite, the green beans? I’m a try again with those.
Pickles
3 mini cucumbers, quartered
2 cup water
2 cups white vinegar
1 cup sugar
3 tbsp salt
1 tbsp peppercorns
1 tbsp corriander
1 tbsp fennel
2 sprigs tarragon
1 red pepper
4 garlic cloves
Prepare your cucumbers and place them in the jar along with your tarragon, pepper and garlic.
In a sauce pan, toast your spices. Add in your water, vinegar, sugar and salt. Bring to a boil and boil for 5 minutes.
Pour your hot mixture over your cucumbers, seal up your jar. Let cool and place in fridge for at least 2 days before eating!

Pickled Strawberries
4 cups strawberries, halved
1 cup water
1 cup white vinegar
1 cup sugar
10 peppercorns
2 sprigs tarragon
1 cinnamon stick
1 vanilla bean, halved
Prepare your berries and place them in the jar along with your peppercorns, tarragon, cinnamon stick and vanilla bean.
Bring your water, vinegar and sugar to a boil. Pour hot mixture over your strawberries. Seal up your jar, let cool and refrigerate!
I ate these the next day lol!
