I made Salmon + Shrimp Teriyaki Bowls. They were a hit and super easy to make! Here goes the recipe:
Salmon + Shrimp Teriyaki Bowls
Ingredients
- 2 salmon filets
- 6 shrimp
- 1 tsp garlic powder
- 1 tsp pepper
- 1 tsp paprika
- 1-2 tbsp olive oil
- 1-2 cups of your favorite teriyaki sauce
- 1 pineapple cut in half and gutted out
- 1/4 gutted pineapple chopped
- 1 bell pepper diced
- 2 scallions chopped (save a few for garnish)
- white and black sesame seeds garnish
Instructions
- Season your salmon and shrimp with garlic powder, pepper, paprika and olive oil.
- Heat your skillet on medium heat brown your salmon on each side 3-5 minutes. Also brown your shrimp 2-3 minutes each side. Set salmon and shrimp aside.
- Add in hour bell pepper and scallion. Cook 3-5 minutes.
- Add in pineapple and cook 1-2 minutes.
- Pour your teriyaki sauce in and bring to a simmer. Simmer and stir 3-5 minutes on medium heat.
- Carefully add your salmon and shrimp and coat with sauce.
- Pour sauce all over salmon and shrimp. Serve over coconut rice and garnish with sesame seeds and scallion. Enjoy!
Coconut Rice
Ingredients
- 1 cup jasmine rice
- 2 cups coconut milk
- 1 tbsp white sugar
- 1-2 tsp salt
Instructions
- Add coconut milk, sugar and salt to a pot and bring to a boil. Be careful because it will over flow!
- Pour in rice and stir. Turn heat low and cover. Cook 20 minutes or until all liquid is gone.
- Fluff with fork and enjoy!
