This past Sunday, a friend of mine decide to have a potluck! Seeing that she is vegan, this gave me a chance to practice my vegetarian skills. Scrolling through my IG earlier that day I seen a roasted cauliflower, so that inspired me to make one. I roasted this bad boy for one hour with some carrots and drizzled it with a grainy mustard vinaigrette. Talk about delicious, this dish almost made me turn vegan!
Grainy Mustard Vinaigrette
Roasted Cauliflower with Mustard Vinaigrette
Ingredients
- 2 cauliflowers
- olive oil
- salt to taste
- 8 tbsp olive oil
- 4 tbsp red wine vinegar
- 2 tbsp grainy dijon mustards
- 8 cloved garlic, minced
- 1 tsp sugar
- 1/2 tsp salt
- fresh chopped parsley
Instructions
- Preheat oven to 425 degrees. Prepare a baking sheet or pan by greasing it.
- Prepare your cauliflower by discarding the leaves and carefully coring out the stem but leave the cauliflower whole.
- Rub olive oil all over cauliflower and salt to taste. Place on baking sheet and pop in oven for 1 hour. (I threw in some carrots just because I had some)
- Mix together oilive oil, red wine vinegar, grainy mustard, garlic, sugar and salt. Pour over cauliflower last 15 minutes of cooking.
- Let cool, top with parsley and enjoy!
