Roasted Cauliflower with Mustard Vinaigrette

This past Sunday, a friend of mine decide to have a potluck! Seeing that she is vegan, this gave me a chance to practice my vegetarian skills. Scrolling through my IG earlier that day I seen a roasted cauliflower, so that inspired me to make one. I roasted this bad boy for one hour with some carrots and drizzled it with a grainy mustard vinaigrette. Talk about delicious, this dish almost made me turn vegan!

 

 Grainy Mustard Vinaigrette

Roasted Cauliflower with Mustard Vinaigrette

Ingredients

  • 2 cauliflowers
  • olive oil
  • salt to taste
  • 8 tbsp olive oil
  • 4 tbsp red wine vinegar
  • 2 tbsp grainy dijon mustards
  • 8 cloved garlic, minced
  • 1 tsp sugar
  • 1/2 tsp salt
  • fresh chopped parsley

Instructions

  1. Preheat oven to 425 degrees. Prepare a baking sheet or pan by greasing it.
  2. Prepare your cauliflower by discarding the leaves and carefully coring out the stem but leave the cauliflower whole.
  3. Rub olive oil all over cauliflower and salt to taste. Place on baking sheet and pop in oven for 1 hour. (I threw in some carrots just because I had some)
  4. Mix together oilive oil, red wine vinegar, grainy mustard, garlic, sugar and salt. Pour over cauliflower last 15 minutes of cooking.
  5. Let cool, top with parsley and enjoy!
