Shrimp Leeks and Spinach

It’s #SundayFunday! That means Atlanta Housewives, Watch What Happens Live and Sunday dinner. Oh! Also a glass of wine. My normal Sunday night. Tonight’s dinner was out my norm. I did a fairly light pasta and cooked with first time ingredients, like leeks. Y’all know I love my onions! I found this Shrimp, Leeks and Spinach Pasta recipe that I now share with you!

Shrimp Leeks and Spinach

Ingredients

  • 3/4 lb gemelli or another short pasta
  • 2 tbsp butter
  • 2 leeks, only the white and light greens parts cut in half length wise then crosswise
  • salt and pepper
  • 1 lb raw shrimp
  • 1 lemon, zested
  • 3/4 cup heavy cream
  • 5 oz baby spinach

Instructions

  1. Cook pasta according to instructions on the box. Drain and return to the pot.
  2. In the meantime, melt butter over medium high heat and add the leeks,1/2 tsp salt and 1/2 tsp pepper. Cook for about 5 minutes or until soft.
  3. Toss in your shrimp and lemon zest. Cook for about 4 minutes or until shrimp is opaque.
  4. Add cream and 1/2 tsp salt to your cooked pasta on medium heat, until cream thickens. Toss in your shrimp mixture along with the spinach. Stir until well combined and spinach has wilted.
