It’s #SundayFunday! That means Atlanta Housewives, Watch What Happens Live and Sunday dinner. Oh! Also a glass of wine. My normal Sunday night. Tonight’s dinner was out my norm. I did a fairly light pasta and cooked with first time ingredients, like leeks. Y’all know I love my onions! I found this Shrimp, Leeks and Spinach Pasta recipe that I now share with you!
Shrimp Leeks and Spinach

- 3/4 lb gemelli or another short pasta
- 2 tbsp butter
- 2 leeks, only the white and light greens parts cut in half length wise then crosswise
- salt and pepper
- 1 lb raw shrimp
- 1 lemon, zested
- 3/4 cup heavy cream
- 5 oz baby spinach
Instructions
- Cook pasta according to instructions on the box. Drain and return to the pot.
- In the meantime, melt butter over medium high heat and add the leeks,1/2 tsp salt and 1/2 tsp pepper. Cook for about 5 minutes or until soft.
- Toss in your shrimp and lemon zest. Cook for about 4 minutes or until shrimp is opaque.
- Add cream and 1/2 tsp salt to your cooked pasta on medium heat, until cream thickens. Toss in your shrimp mixture along with the spinach. Stir until well combined and spinach has wilted.
