It’s Tuesday so that calls for tacos or in this case fajitas. I mean I’m rolling em up in a tortilla, same difference right? Anyways. I’m all about quick flavorful meals. This sheet pan meal is sure to satisfy you any night of the week. Few ingredients plus it’s not costly. I spent roughly around $12 for this meal that feeds 1-4 people. Sheet Pan Tacos
Ingredients
- 1 red chili pepper sliced
- 2 jalapeños sliced
- 1 orange bell pepper sliced
- 1 medium onion sliced
- 3 chicken thigh filets cut into strips
- 2 tbsp olive oil
- 3 tbsp taco seasoning
- 10 to rtillas
Instructions
- Preheat your oven to 425 degrees.
- Line your baking sheet with parchment (if you want easy clean up). Arrange your sliced peppers and onions. Top with chicken thigh strips.
- Drizzle olive oil all over and season with taco seasoning!
- Pop in oven for 30 minutes. Stirring mixture around 15 minutes in.
- Heat up your tortillas in some foil last 10 minutes of cooking time.
