Unofficial First Day of Summer

Memorial Day is the “unofficial first day of summer”. The weather was perfect yesterday for some poolside grilling, so that’s what I did. I made some surf and turf skewers and boozy fruit! Great way to the start off the unofficial first day of summer.

 

Spiced Sea Bass Skewers

seabass, skinned & cut into squares
3 tbsp olive oil
1 tbsp cayenne pepper
2 tsp salt
1 garlic clove, minced
1 tbsp orange zest
1 tsp lemon garlic Flavor God
1 tbsp parsley, chopped

1. Soak your skewers for 20 minutes. Prepare your fish and place on skewers.
2. Combine all your ingredients and mix well over fish.
3. Grill for 3 minutes on each side, or until white and flakey.
4. Drizzle over your choice of sauce (GG Sauce duh!) and enjoy!

Boozy Watermelon

1 in. watermelon slices
1 oz. bourbon (or more)
ripped pieces of mint

1. Set your sous vide to 122 degrees F and prepare your watermelon.
2. Place your watermelon slices in a ziplock bag along with bourbon and mint.
3. Use the water displacement method and sous vide for 30 minutes.
4. When done drop in ice water bath, eat right then or store in fridge for a few days.

*If you don’t have a sous vide machine. Simply place in bags and set in fridge over night or up to 2 days.
