Pep up your appetizer!

I wanted to try out a new appetizer/side dish, this could even be a snack. I had some mini sweet peppers and a bunch other random stuff. So I came up with these ricotta medley stuffed peppers. So simple and delicious! Try these for your next shindig!

Stuffed Sweet Peppers

Ingredients

  • 10 mini sweet peppers, halved and gutted out
  • 1 cup mushrooms, finely chopped
  • 1 tbsp butter
  • 1 tsp salt
  • 1 cup spinach
  • 2 tbsp garlic, minced
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • bread crumbs

Instructions

  1. Preheat oven to 400 degrees.
  2. Sauté your mushrooms with butter and salt, about 6 minutes. Add in your spinach, cook until wilted down.
  3. Add your garlic and turn off your heat.
  4. Mix in your ricotta and parmesan cheese. Fill peppers up with mixture.
  5. Sprinkle over bread crumbs and pop in the oven for 30 minutes!
