I’ve seen everyone making Banana Bread during this pandemic. So I decided to jump on it. I adapted Chrissy Teigen’s recipe switching up a few of the ingredients. I add chocolate chips and almonds. You can omit those or even use walnuts. I didn’t have a loaf pan so I did muffins. But I topped these off with CBD chocolate drizzle and oh my! I mixed my chocolate chips with Simply High Extracts CBD Butter and ooh wee, this set it off! So go put those black bananas to use and make this recipe!
Banana Bread Muffins
Ingredients
- 4 ripe bananas
- 1/2 cup veggie oil
- 2 eggs
- 1/2 cup almond milk
- 2 cups flour
- 2 cups white sugar
- 1 instant vanilla pudding box
- 1 tsp baking soda
- 1 1/2 tsp salt
- 1/4 cup chocolate chips
- 1/4 cup almonds sliced
- 1 tbsp Simply High Extract CBD Butter
- 1/3 cup chocolate chips
Instructions
- Preheat your oven to 400 degrees. (We will turn the temperature down later)
- In a bowl, mash up your bananas and add in your oil, eggs and milk. Mix well, set aside.
- In another bowl mix in your flour, sugar, pudding mix, baking soda and salt.
- Now add in your wet ingredients with your dry and mix well.
- Gently fold in your chocolate chips and almonds.
- Grease your muffin tin and add in about 2 tbsp of your batter. Pop in your oven and turn oven down to 325 degrees. Bake for 30-35 minutes.
- Melt your chocolate with your CBD butter until smooth.
- Drizzle chocolate over muffins when cool and enjoy!
