I got to transform Bluehouse Salmon into this delicious Coconut Salmon dish. Bluehouse Salmon isn’t your typical farm raised fish company. Think of them as a greenhouse but for fish. They raise their salmon happy, healthy and in a way thats truly sustainable. Right here in Miami, Florida! And it definitely shows at how tasty this salmon was in this easy one pot dish. I used fresh ingredients and coconut milk with a dash of asian flare. Which all paired so well with this flaky fresh salmon. #BluehouseSalmon

Coconut Salmon
Ingredients
- 4 salmon filets or slice filets into chunks
- 4 tsp salt
- 4 tsp pepper
- 4 tsp Cajun seasoning
- 2 tbsp avocado oil
- 1 bell pepper chopped
- 1/2 small red onion chopped
- 3 garlic cloves chopped
- 3 green onions chopped (green and white parts)
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp brown sugar
- 1/2 lime squeezed
- 1 tbsp fish sauce
- 1 tbsp cilantro chopped
- 1 can of coconut milk
- 1 tbsp cornstarch + 3 tbsp water mixed
- 1 small red chili
- more lime and cilantro for garnish
Instructions
- Start by adding your avocado oil to your salmon. Seasoning with salt, pepper and Cajun seasoning.
- Heat your skillet to medium heat. Add a little bit more avocado oil to skillet.
- Add in your salmon and brown 2 minutes each side then set aside. (Will finish cooking later in recipe)
- Toss in your bell pepper and red onion. Add more oil if needed. Mix around on medium low heat for 5 minutes.
- Add in your green onions and garlic. Mix well stirring for 2 minutes.
- Toss in your brown sugar and squeezed lime juice. Mix.
- Pour in your coconut milk and fish sauce along with your cilantro. Mix well and bring to a slight simmer. At this time taste for seasoning.*
- Nestle back in your salmon and cook until salmon is finished. It took me about 8-10 minutes.
- Add in your cornstarch slurry to thicken sauce if you please.
- Garnish with red chili's, limes and cilantro. Serve over rice and enjoy!
