Coconut Salmon

Ingredients

salmon filets or slice filets into chunks

bell pepper

small red onion

garlic cloves
chopped

green onions
chopped (green and white parts)

brown sugar

lime
squeezed

tbsp
fish sauce

tbsp
cilantro
chopped

can of coconut milk
1
tbsp
cornstarch + 3 tbsp water
mixed

small red chili
more lime and cilantro for garnish
Instructions
Start by adding your avocado oil to your salmon. Seasoning with salt, pepper and Cajun seasoning.
Heat your skillet to medium heat. Add a little bit more avocado oil to skillet.
Add in your salmon and brown 2 minutes each side then set aside. (Will finish cooking later in recipe)
Toss in your bell pepper and red onion. Add more oil if needed. Mix around on medium low heat for 5 minutes.
Add in your green onions and garlic. Mix well stirring for 2 minutes.
Toss in your brown sugar and squeezed lime juice. Mix.
Pour in your coconut milk and fish sauce along with your cilantro. Mix well and bring to a slight simmer. At this time taste for seasoning.*
Nestle back in your salmon and cook until salmon is finished. It took me about 8-10 minutes.
Add in your cornstarch slurry to thicken sauce if you please.
Garnish with red chili's, limes and cilantro. Serve over rice and enjoy!

Notes:
*Add more brown sugar, fish sauce or lime if needed. I like mines on the sweet and salty side. Add a pinch of salt or pepper.
