  • 1 tbsp cilantro chopped
  • 1 can of coconut milk

Instructions

  • Start by adding your avocado oil to your salmon. Seasoning with salt, pepper and Cajun seasoning.
  • Heat your skillet to medium heat. Add a little bit more avocado oil to skillet.
  • Add in your salmon and brown 2 minutes each side then set aside. (Will finish cooking later in recipe)
  • Toss in your bell pepper and red onion. Add more oil if needed. Mix around on medium low heat for 5 minutes.
  • Add in your green onions and garlic. Mix well stirring for 2 minutes.
  • Toss in your brown sugar and squeezed lime juice. Mix.
  • Pour in your coconut milk and fish sauce along with your cilantro. Mix well and bring to a slight simmer. At this time taste for seasoning.*
  • Nestle back in your salmon and cook until salmon is finished. It took me about 8-10 minutes.
  • Add in your cornstarch slurry to thicken sauce if you please.
  • Garnish with red chili's, limes and cilantro. Serve over rice and enjoy!

Notes

Notes:
*Add more brown sugar, fish sauce or lime if needed. I like mines on the sweet and salty side. Add a pinch of salt or pepper.
