French Onion Chicken, Not Soup

Its strangely cold outside here in Miami and days/nights like this I just want to cuddle under a blanket and eat soup. Seeing that its not that cold, I settled for this comforting dish of French Onion Chicken. A one pan dish that doesn’t take much and gives full flavor! Served along side with Mash Potatoes and Green Beans, its a comfort dish you must make.

French Onion Chicken

Ingredients
  

  • 3 chicken breast
  • 1 1/2 sweet onion sliced
  • 3 garlic cloves chopped
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tbsp worcestershire sauce
  • 1-2 tbsp flour
  • 1 1/2-2 cups beef broth
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme chopped
  • mozzarella cheese

Instructions
 

  • Season your chicken with garlic powder, pepper, salt and oregano.
  • Heat your skillet to medium heat and add 1 tbsp butter and sear each side of your chicken for 3-4 minutes. Set aside (you don’t have to cook your chicken all the way thru, you will later in the recipe)
  • Turn your heat to medium low, add 2-3 tbsp butter and onions with a sprinkle of salt. Cook 20-30 minutes stirring often. (DO NOT cook your onions fast on high heat! It’s a low and slow process that’s worth it!)
  • Add your worcestershire sauce and garlic, cook 2-3 minutes.
  • Add your flour and cook for 3-5 minutes. Pour in your beef broth. Stir and bring to a simmer. Taste for seasoning. (I sprinkled in some more garlic powder and oregano with a dash of worcestershire sauce)
  • Place your chicken (plus pour in accumulated chicken juices) on top and simmer for 10-15 minutes. (Be mindful of the size of your chicken)
  • Place a slice of cheese on top of each chicken and broil 3-5 minutes. Garnish with fresh thyme and enjoy!

Notes

Remember to season this to your liking. I said 1 tsp but you might need more or less. Totally up to you. I like to keep my seasonings simple but feel free to use what you have. I also used a Oregano blend.
