Season your chicken with garlic powder, pepper, salt and oregano.
Heat your skillet to medium heat and add 1 tbsp butter and sear each side of your chicken for 3-4 minutes. Set aside (you don’t have to cook your chicken all the way thru, you will later in the recipe)
Turn your heat to medium low, add 2-3 tbsp butter and onions with a sprinkle of salt. Cook 20-30 minutes stirring often. (DO NOT cook your onions fast on high heat! It’s a low and slow process that’s worth it!)
Add your worcestershire sauce and garlic, cook 2-3 minutes.
Add your flour and cook for 3-5 minutes. Pour in your beef broth. Stir and bring to a simmer. Taste for seasoning. (I sprinkled in some more garlic powder and oregano with a dash of worcestershire sauce)
Place your chicken (plus pour in accumulated chicken juices) on top and simmer for 10-15 minutes. (Be mindful of the size of your chicken)
Place a slice of cheese on top of each chicken and broil 3-5 minutes. Garnish with fresh thyme and enjoy!
Notes
Remember to season this to your liking. I said 1 tsp but you might need more or less. Totally up to you. I like to keep my seasonings simple but feel free to use what you have. I also used a Oregano blend.
