Living in South Florida it’s practically grill season year round (not to brag). But with weather warming up everywhere else, it’s about that time to fire up the grill! I came across this recipe and thought this would be a fun way to make your grill look cool! Two slices of juicy pineapples and a nice filet of salmon in between that’s smothered in teriyaki sauce!?
Pineapple Salmon Planks
Ingredients
- 4 salmon filets
- 2 pineapples
- 2 cups teriyaki sauce
- 4 sprigs of cilantro
- kitchen twine
Instructions
- Soak your kitchen twine and set your grill to 350 degrees.
- Slice your pineapple on each side to make planks. One pineapple will make 4 planks.
- Brush teriyaki sauce over salmon and top with cilantro. Place salmon on one of the pineapple planks and top with another pineapple plank. Secure planks with twine. Do this with the other 3 salmon filets.
- Grill covered for 5-7 minutes. Turn over and remove the top plank by cutting the twine. Brush with more teriyaki sauce and grill for 5-10 more minutes or until salmon is cooked through.
- Serve with one of the pineapple planks, brush with more teriyaki sauce if you would like and take the other pineapple plank and squeeze the juices over salmon. Enjoy with white rice and asparagus!
