You know when your mom made spaghetti you were going to have that for the rest of the week til it was gone. This is kind of my case right now. I dont feel like cooking much so Ill triple back on that pot of spaghetti lol! I used fresh and pantry staples to throw this spaghetti together. Technically pictured I used fettuccine pasta, I mean who cares what pasta you use right? Also I used my favorite Trader Joe’s soy chorizo so this is technically a Vegan Spaghetti. You can add ground meat if you like or toss in some mushrooms in zucchini. Or throw all of it in. This recipe is easy and versatile.
Quick Spaghetti
Ingredients
- 8 oz spaghetti noodles cooked
- 1 tbsp olive oil
- 6 oz Trader Joe’s Soy Chorizo
- 1/2 small white onion sliced
- 5 garlic cloves chopped
- 1 tsp salt
- 2 tsp fresh oregano chopped
- 2 tsp fresh rosemary chopped
- 2 tsp fresh basil chopped
- 1 tbsp fresh parsley chopped
- 1 10 oz jar of marinara I used bout half the jar
- 1 half can of diced tomatoes
- 1-2 tsp pepper
- 1 cup of water
- 1 tbsp sugar
Instructions
- Add your olive oil to your pot on medium high heat. Toss in your onions and salt. Turn heat to medium low and cook 3-5 minutes stirring.
- Toss in garlic, oregano, rosemary and basil. Mix for 2 minutes.
- Toss in your soy chorizo and stir for 5 minutes.
- Dump in your marinara, tomatoes, water, salt and sugar. Stir well and taste for seasoning. Add more herbs, sugar, salt etc.
- Bring to a simmer, cover and cook for 15 minutes.
- Mix well and toss in parsley. Enjoy!
Notes
I enjoyed using fresh herbs! You could use a dried italian seasoning. Instead of soy chorizo feel free to use ground meat. You can add more vegetables if you like. I kept mine fresh and simple.
