Add your olive oil to your pot on medium high heat. Toss in your onions and salt. Turn heat to medium low and cook 3-5 minutes stirring.
Toss in garlic, oregano, rosemary and basil. Mix for 2 minutes.
Toss in your soy chorizo and stir for 5 minutes.
Dump in your marinara, tomatoes, water, salt and sugar. Stir well and taste for seasoning. Add more herbs, sugar, salt etc.
Bring to a simmer, cover and cook for 15 minutes.
Mix well and toss in parsley. Enjoy!
Notes
I enjoyed using fresh herbs! You could use a dried italian seasoning. Instead of soy chorizo feel free to use ground meat. You can add more vegetables if you like. I kept mine fresh and simple.
