Quick Spaghetti

Ingredients
  

  • 8 oz spaghetti noodles cooked
  • 1 tbsp olive oil
  • 6 oz Trader Joe’s Soy Chorizo
  • 1/2 small white onion sliced
  • 5 garlic cloves chopped
  • 1 tsp salt
  • 2 tsp fresh oregano chopped
  • 2 tsp fresh rosemary chopped
  • 2 tsp fresh basil chopped
  • 1 tbsp fresh parsley chopped
  • 1 10 oz jar of marinara I used bout half the jar
  • 1 half can of diced tomatoes
  • 1-2 tsp pepper
  • 1 cup of water
  • 1 tbsp sugar

Instructions
 

  • Add your olive oil to your pot on medium high heat. Toss in your onions and salt. Turn heat to medium low and cook 3-5 minutes stirring.
  • Toss in garlic, oregano, rosemary and basil. Mix for 2 minutes.
  • Toss in your soy chorizo and stir for 5 minutes.
  • Dump in your marinara, tomatoes, water, salt and sugar. Stir well and taste for seasoning. Add more herbs, sugar, salt etc.
  • Bring to a simmer, cover and cook for 15 minutes.
  • Mix well and toss in parsley. Enjoy!

Notes

I enjoyed using fresh herbs! You could use a dried italian seasoning. Instead of soy chorizo feel free to use ground meat. You can add more vegetables if you like. I kept mine fresh and simple.
