Well seasoned chicken thigh filets topped over potatoes, green beans, mushrooms, onion and garlic. With a few nobs of good butter. Roasted all together creating this easy week night meal that won’t disappoint.
This recipe was inspired by Audisea’s viral TikTok recipe. This recipe is really versatile. I dont recommend using chicken breast because it would dry out. But using bone in chicken would be lovely here. Potatoes is a must for this recipe but you can use zucchini, asparagus, broccoli or any other good roasting veggie. As far as seasonings? Use whatever you have on hand. I really enjoyed the Dijon so dont skip this part!
Roasted Chicken and Veg
Ingredients
- 4 chicken thighs boneless and skinless
- red potatoes quartered
- mushrooms sliced
- green beans cut in half
- onion sliced
- garlic
- avocado oil
- unsalted butter
- fresh parsley chopped

- Chicken Seasoning
- salt
- pepper
- garlic powder
- paprika
- Italian herb blend
- dijon mustard
- red chili flakes
- lemon juice

- Vegetable Seasoning
- salt
- pepper

Instructions
- Preheat your oven to 375 degrees.
- Toss your chicken in a container or ziplock bag with a little bit of oil and all the seasonings listed. Mix well.
- In another container add your vegetables along with a little bit of oil and all the seasonings. Mix well.
- Place your seasoned vegetables in a sturdy oven safe dish then top with season chicken. Add a few nobs of butter (I did about 3tbsp of butter) and place in oven for 45 minutes. Every 15 minutes, carefully baste your chicken with the juices.
- Carefully remove from oven and top with fresh parsley and enjoy!
