Preheat your oven to 375 degrees.
Toss your chicken in a container or ziplock bag with a little bit of oil and all the seasonings listed. Mix well.
In another container add your vegetables along with a little bit of oil and all the seasonings. Mix well.
Place your seasoned vegetables in a sturdy oven safe dish then top with season chicken. Add a few nobs of butter (I did about 3tbsp of butter) and place in oven for 45 minutes. Every 15 minutes, carefully baste your chicken with the juices.
Carefully remove from oven and top with fresh parsley and enjoy!
