Tuscan Salmon

I assume that you’re here because you want the full Tuscan Salmon recipe you saw on my Instagram! Make your weeknight meals easier with this quick one pot recipe or serve this on a date night with bae. Make some mashed potatoes and serve this right on top!

Tuscan Salmon

Ingredients
  

  • 2-4 salmon filets
  • 1 tsp salt
  • 2 tsp pepper
  • 2 tsp cajun seasoning
  • 1-2 tbsp S.H.E olive oil or regular olive oil
  • 1/4 onion chopped
  • 3 garlic cloves chopped
  • 1/4 cup of sun-dried tomatoes
  • 2 tbsp garlic onion seasoning**
  • 1 tbsp Italian seasoning
  • 1/3 cup chicken broth
  • 1/2 cup heavy cream
  • handful of spinach
  • squeeze of lemon

Instructions
 

  • Season your salmon filets with salt, pepper and cajun seasoning.*
  • Heat up your skillet to medium heat with olive oil.
  • Place filets face down in hot skillet. Sear for 3-5 minutes. Salmon should easily release from pan and be nice and browned. Set salmon to the side.
  • Toss in your onion and add a little more olive oil if needed. Cook on low-medium for 3 minutes stirring.
  • Toss in garlic, cook 1 minute stirring.
  • Toss in your sun-dried tomatoes plus your garlic onion seasoning and Italian seasoning. Stir around for 2-3 minutes.
  • Pour in your chicken stock and heavy cream. Stir until everything is mixed all together. Taste to see if you need to add any more seasoning.
  • Gently place your salmon filets back in and cook on a light simmer for 8-10 minutes. You can place a lid on top to help speed the cooking process. Stir in-between cooking time.
  • Once your filets are cooked through, take them out. Toss in your spinach and stir until its all wilted in.
  • 10. Place your filets back in and pour your sauce over your filets, squeeze over some lemon juice and enjoy!

Notes

*Season your salmon how ever you like. A classic salt and pepper would work just fine.
**If you dont have a garlic and onion blend. Just seasoning with salt, pepper, garlic powder, onion powder and paprika. Also again you can season this to your liking.
Instead of sun-dried tomatoes you could use fresh tomatoes.
