Stewed Salmon

Ingredients
  

  • 1 lb salmon chunked
  • 2 limes
  • 2 tbsp oregano
  • 1 onion diced
  • 1 bell pepper diced
  • 5 garlic cloves diced
  • ¼ cup White Wine
  • 1 tbsp tomato paste
  • 1 cup tomato sauce
  • 2 tsp sugar
  • ¼ cup water
  • 1 tbsp cilantro chopped
  • 5 sprigs of thyme
  • 2 tbsp olives
  • salt + pepper to taste
  • 1-2 tbsp olive oil

Instructions
 

  • Start off by seasoning your salmon with lime, 1 tbsp oregano, salt + pepper. Set aside for 5-10 minutes.
  • Add olive oil to your skillet over medium heat. Once the oil is hot add in your salmon. Sear each side for 2 minutes then remove salmon and set aside.
  • Add in your onion, bell pepper + garlic. Saute for 3-5 minutes adding a little bit of salt + pepper.
  • Pour in your wine and cook for 3-5 minutes. Add in your tomato paste, tomato sauce, olives, sugar + water. Stir well.
  • Stir in your thyme + cilantro and let simmer for 5 minutes. Taste for seasoning.
  • Carefully add your salmon back in. Flipping each piece so it’s covered in sauce. Cover with lid and finish cooking for 2-3 minutes.
  • Top with fresh cilantro and squeeze some lime over!
