Roast your corn in husk in oven at 375 for 1 hour.
Carefully peel husk and discard that stringy stuff. It should be real easy to pull away. Tie your husk into a knot.
Mix mayo, sour cream and lime juice together. Slather that all over your corn.
Sprinkle corn with cotija cheese, chili powder and chili lime seasoning. Garnish with cilantro and enjoy!
