Vegan Summer Crab Rolls

Ingredients
  

  • 1 can hearts of palm drained and rinsed
  • 1 tbsp vegan butter
  • 2 tbsp furikake seasoning
  • 1-2 tbsp old bay seasoning
  • 1 tbsp lemon juice
  • 4 chives chopped
  • butter lettuce
  • sweet rolls
  • vegan mayo

Instructions
 

  • Shred your hearts of palm with a fork. You can chop these but I like the shredding method better presentation wise.
  • Add your vegan butter to a skillet on medium heat. Add in your shredded hearts of palm. Flatten it down evenly like a pancake and cook for like 3-5 minutes.
  • Sprinkle in your seasonings, toss in your chives and squeeze in your lemon juice, give it a good mix then flatten it back out and cook 2 more minutes.
  • Set your vegan crab meat to the side to cool.
  • Everyone make their crab rolls different. I like to use sweet rolls, add some mayo and butter lettuce and stuff it with my vegan crab meat and top it with a dusting of old bay and more lemon juice!
