Spicy Shrimp & Mussels

Ingredients
  

  • 1 lb mussels cleaned
  • 8 shrimp
  • 2 tbsp unsalted butter
  • 1 shallot chopped
  • 4 garlic cloves chopped
  • 2 lemons 1 to zest and juice / 1 to garnish
  • 3 tsp salt
  • 3 tsp pepper
  • 3 tsp red chili flakes
  • 2 tsp cajun seasoning
  • 3 tsp garlic seasoning blend
  • 1 cup white wine
  • 1-2 cups of grape tomatoes halved
  • 1 red chili sliced
  • handful of parsley chopped

Instructions
 

  • Season your shrimp with pepper and cajun seasoning. Add to hot skillet with 1 tbsp of butter to sear both sides of shrimp. 2 minutes each side then set aside.
  • In the same pan, turn the heat to medium low and add your shallot along with 1 tbsp butter. Sprinkle in a pinch of salt. Stir for 1-2 minutes.
  • Add in your garlic and and lemon zest. Stir 1-2 minutes.
  • Pour in your white wine and sprinkle in your salt, pepper, red chili flakes and garlic seasoning. Give it a good mix. Toss in your tomatoes and let this simmer/reduce for 3-5 minutes.
  • Add in your mussels. Mix and cover with lid and let cook 5-7 minutes or until your mussels open.
  • Toss in your parsley and mix. Nestle your shrimp back in. Garnish with sliced red chili, more parsley and lemon slices. Enjoy!

Notes

Season this to your liking. But I like to keep in simple and fresh with just a little bit of salt pepper and red chili flakes and a dash of this garlic blend seasoning. I like my shrimp and broth spicy, if you don’t like spicy, omit the red chili flakes and cajun seasoning. :)
