Preheat your oven to 375 degrees and start cleaning and trimming your chicken thighs. Some come with excess skin and I trim that off and throw them into a cold pan set to medium heat while I prep everything else.
Throw chicken thighs in a bowl with 2 tbsp olive oil and 2-3 tbsp seasonings. Measure seasonings to your liking. Mix seasoning, oil and chicken well.
Your pan with the chicken skins, remove the skins. Keep the oil in pan. Place chicken thighs skin side down and sear for 3-5 minutes then flip and cook for 2-3 minutes. You’re not cooking the chicken all the way thru. You will in the oven.
After searing your chicken, carefully place your chicken in oven. (Transfer chicken out your stove dish if it’s not oven safe and onto an over safe dish). Cook chicken for 45-60 minutes, internal temp 165-195.
Now let’s throw those potatoes in a bowl along with the remaining 2tbsp of olive oil and seasonings. Mix well and place on an oven safe baking dish. Pop in oven along with chicken.
Check everything at 30 minutes. Maybe toss your potatoes around and continue to cook.
A hour later you’ll have juicy seasoned chicken and tasty potatoes!
